    Fill a large pot with water, add a big pinch of salt, and bring to a boil over high heat.

    Meanwhile, heat olive oil in a large skillet over medium heat. Add chicken chorizo , breaking into crumbles, and cook until browned ⏱️ 5 minutes .

    Stir in finely minced garlic , finely chopped sweet red chili pepper , and tomato paste . Cook, stirring constantly, until fragrant ⏱️ 2 minutes .

    Add penne pasta to the boiling water and cook according to package directions until al dente ⏱️ 10 minutes . Reserve ½ cup pasta water, then drain the pasta well.

    Toss the drained pasta directly into the skillet with the chorizo mixture. Add reserved pasta water 1 tbsp at a time, tossing continuously, until the sauce evenly coats the pasta. Season with salt and black pepper to taste.
